Skillet Creamy Garlic Chicken w/ Broccoli
Ingredients
- 2 pounds (907 g) boneless chicken breasts
- kosher salt , to taste
- fresh cracked black pepper , to taste
- 1/2 teaspoon (2.5 ml) paprika
- 4 tablespoons (60 g) butter, divided
- 4-5 cloves (4-5 cloves) garlic , minced
- 10.5 ounces (298 g) (1 can) Condensed Cream of Chicken Soup , or more if needed
- 1 cup (240 ml) water
- 2 to 3 cups (480-710 ml) chopped broccoli
- 1 teaspoon (5 ml) chopped fresh parsley
- lemon wedges , optional
Serve with rice or pasta
Instructions
- Season chicken with salt, pepper and paprika. Set aside.
- Heat large pan on medium-high heat. Melt half the butter (2 tablespoons). Add the chicken and cook for 5 minutes on each side or until the chicken is browned. Remove chicken from pan, cover and keep warm.
- In same pan melt remaining 2 tablespoons of butter, add the garlic and cook until garlic is lightly brown and fragrant. Whisk in the condensed cream of chicken soup and water. Cook until the mixture is hot and bubbly, then turn heat down to low.
- Add chicken and broccoli back into the pan cover the pan with a lid and cook for about another 10 minutes or until chicken is cooked through. If you want more firm or al-dente broccoli, add the broccoli after the chicken is almost cooked so that the broccoli is more crunchy.
- Serve with rice or pasta and wedges of lemon. Garnish with chopped parsley.

Oh my. Don’t leave out that lemon!!! I let the wedges sit in the remaining sauce while we sat around the dinner table and oh, what flavor! I smashed the wedges to get the juice out, stirred it around and threw in the leftover rice. I gaze at it longingly every time I open the fridge! I’m using up leftovers in order so it is waiting it’s turn to jump in my mouth. I used thighs and for the first time ever my chicken actually browned so nicely. Picture worthy. One thing I learned: if using bone-in thighs,
cook a little longer as mine could have used it. Just awesome!!! Thanks for a superb recipe. I’m going to use it for company!

I doubled the sauce as I had slightly more broccoli than 4 cups. I cut up the lemon into eighths and put them into the sauce as it simmered. At the end I pressed the lemons with the back of a spoon and the juice flowed into the sauce. There was enough sauce for the chicken and brown rice I made. It is so delicious!
This dish was easy and delicious. I chose to cut the chicken breast into bite size pieces. I browned the chicken and garlic in olive oil instead of butter for a healthier entree with no cholesterol. I also added more seasoning to the cream of chicken mixture to give it additional flavor. I served over white rice with a croissant. It made a tasty meal.
Great recipe! We added 1/2 teaspoon of onion powder to season the chicken and then added 1/2 teaspoon of white pepper to the milk/cream of chicken mixture – that really added some flavor!

Hi Shannon, yes you can use frozen broccoli. But the cooking time will be much faster with frozen broccoli so make sure the chicken is cooked all the way through.

Yes, you can! The spinach will cook super quick so as soon as it wilts in the sauce, it’s cooked.

Just a quick question. It says to cook chicken for only 5 minutes…is this chicken raw or precooked? How can chicken only be cooked for 5 min? Thank you!!
Hi Jennifer! The chicken isn’t cooked in 5 minutes. The first initial 5 minutes of cooking is just for the browning and that’s 5 minutes on each side. After that, it cooks again for 10 minutes “or until cooked through”, depending on the size of your chicken breasts. So it’s cooking for at least 15 minutes.
Made this tonight but added my own little twists – since my hubby is terribly picky (thanks MIL for spoiling him so bad lol) I added cheese to the gravy. I also started out by chopping wedges of potatoes and pre-frying them half-way before adding the chicken. He won’t eat broccoli without cheese sauce and he won’t eat rice unless its fried rice or pasta with pasta sauce. This was so good he even came back for a second helping! Best part, the whole meal in one pan – got to love that! This recipe was a lifesaver for me – thanks!
This dish was absolutely delicious! First time making it and my parents who are picky loved it. Made it with rice pilaf but probably would make it with white rice next time. Also I would probably need another can of cream of chicken as the sauce just wasn’t enough since it was so yummy!

I just made this in the crockpot with the chicken on the bottom and the broccoli layered on top and the sauce poured over it. I put it on low for 8 hours and it was delicious. I have also used chicken broth, a bit of half and half and some corn starch to thicken instead of the canned soup and it was great!

That should work just fine. The frozen broccoli might end up a bit softer in the end, but should still be tasty!

Has anyone ever tried shrimp instead of chicken? My son and I have cooked this recipe before and we both loved it! Just wanted to try something new for tonight.
Needed something quick and easy. This fit the bill perfectly! I also subbed cc with cream of mushroom as it’s what I had on hand. Added a dash of onion powder to the mix as well. Used half water/half milk to thin the soup but keep the creamy consistency. I would really like to try using chick stock & yogurt next time. Or purchase a low sodium can of condensed soup. Lastly, topped with a tad of cheddar cheese! Definitely will make again. Thanks!

I wasn’t expecting great things from this recipe…I just wanted something quick and easy that included ingredients I already had on hand. But let me tell ya, it was DELICIOUS! I made it exactly according to the recipe. My 11 year old son is super picky, and getting him to eat is a nightmare, but he really enjoyed this. Substitute Chicken stock for the condensed soup. I’m too lazy to go to the store just for one can of soup. It was the only ingredient I was missing and this meal without the soup, still tasted great. Gave it a rich chicken-flavor.

What could be used instead of consended soup? For someone who has to eat gluten free.
I have made this a few times using one full can of coconut milk plus the cream from another (put the can of coconut milk in the fridge over night, pour off the thinner layer of milk and reserve for another use, add the remaining cream to the recipe) and chicken buillon in place of the canned soup and water. It comes out great, and does not taste like coconut. Very easy to adapt to Paleo and dairy free.

This recipe was great, I just wanted to suggest marinating the chicken before one covers it in the suggested seasonings, because I personally like flavors inside the meat as well as on the exterior.
